Quail egg and lobster salpicon in a puff pastry shell

Burgundy-style lobster served with red wine-braised beef cheek, glazed carrots and spring onions


Moroccan-style roasted Maine lobster with quinoa and spicy vegetables

Marinated pineapple carpaccio scented with Selim pepper, Marc de Bourgogne granite

and coconut espuma
